Garlic Herb & Chicken "Salad"
Don't judge this recipe until you try it! It's very easy to put together and it very filling! I modified this recipe to make it lower in calorie and carbohydrates. I measured out 1/2 cup of couscous and cooked it then mixed it with 12oz of cauliflower rice (I keep a bag of Green Giant riced cauliflower on hand). I modified the dressing by swapping the measurements of oil and water. I put 3/4 cup of water and 1/2 cup of oil instead.
NOTE: I used only 2 tablespoons of dressing per chicken cauliflower/couscous mixture. There is enough sauce for 8 servings.
